Peach Balsamic Grilled Chicken

Sweet peach, balsamic vinegar and a hint of Dijon create a glossy summer glaze that turns a simple chicken breast into something worth sitting down for.

Blitz or mash the peach, balsamic, olive oil, rosemary and garlic into a rough marinade. Season well.

Score the chicken fillets lightly, coat in the marinade and rest for at least 10 minutes.

Grill over medium-high heat for 5 to 6 minutes each side, basting with extra marinade, until cooked through and caramelised.

Rest for 3 minutes, then slice and serve over rocket and basil with a drizzle of olive oil.
Tip: Try this in late summer when stone fruit is at its best. Nectarines work equally well.

Sardinian Spinach with Pecorino

In Sardinia, home to the world’s highest concentration of male centenarians, greens dressed in olive oil, lemon and a little aged cheese are an everyday ritual. On the table in fifteen minutes.

Method

Heat the olive oil in a wide pan over medium heat. Add the garlic and chilli and cook until just golden, about 1 minute.

Add the spinach in handfuls, tossing as it wilts. Season and cook for 2 to 3 minutes until just tender.

Remove from heat, squeeze over the lemon and toss once more.

Pile onto a warm plate, scatter with Pecorino and finish with a drizzle of olive oil.
This makes a meal when you add a poached egg and a slice of sourdough.

Sweet Potato Cakes with Lime & Avocado

Crispy, plant-based and full of slow-release energy. Sweet potato is rich in beta-carotene and fibre; paired with ripe avocado, it is deeply nourishing.

Squeeze the grated sweet potato in a clean tea towel to remove moisture. This is the secret to crispy cakes.

Combine with flour, spices, spring onion and herbs. Season and shape into 8 patties.

Cook in olive oil over medium heat for 3 to 4 minutes per side until deep golden.

Toss avocado in lime juice and serve alongside with extra coriander.
Tip: Make a double batch. Leftovers reheat beautifully in a dry pan the next morning.

Walnut & Date Energy Loaf

No refined sugar, no butter, no fuss. Walnuts provide anti-inflammatory omega-3s; dates offer slow-release energy and natural sweetness.

Preheat oven to 170°C fan-forced. Line a standard loaf tin with baking paper.

Pour boiling water over dates with the bicarbonate of soda. Leave 10 minutes to soften.

Pulse the date mixture with tahini and vanilla until a rough paste forms.

Stir in oats, walnuts, cinnamon, ginger and salt. Press firmly into the tin and top with extra walnuts.

Bake 35 to 40 minutes until dark golden. Cool 10 minutes before slicing.
Tip: Keeps well in the fridge for a week. Slice and freeze for longer storage.

Okinawan Miso Soup

A cornerstone of the Okinawan morning meal, eaten daily by some of the world’s oldest women. Simple, restorative and deeply nourishing.

Adapted from the breakfast ritual of Okinawan centenarian Kamada Nakazato, who made miso soup each morning spiked with vegetables from her garden. You can use shiro (white), aka (red) or shinshu (yellow) miso. Darker miso has a stronger flavour and is saltier than lighter varieties.

Ingredients

Bring the dashi stock to a gentle simmer. Add sweet potato and cook 6 to 8 minutes until just tender.

Reduce to very low heat. Whisk miso with a ladle of hot stock until smooth, then stir back into the pot. Do not boil once miso is added, as this destroys its probiotic cultures.

Add tofu and wakame and warm gently for 1 to 2 minutes.

Ladle into warm bowls, scatter with spring onion and finish with a few drops of sesame oil.
Choose unpasteurised miso when possible for the greatest probiotic benefit.
